{Fancy Muffins Anyone?}

 Geri and I were invited to attend a bloggers brunch hosted by Kristin from Living in Color Print at her home this past Saturday {so sweet, right?} and of course, any opportunity to bake- we take it! It’s a way of sharing our love with others. Also, a perfect reason for us to indulge in some yummy sweets! My favorite thing about baking is looking through the oven window and seeing those cute muffin tops rise.
 
Kristen asked for muffins and I did - Blueberry and Strawberry ones!

The recipe I use for muffins is below - similar recipe here. These are always so moist and tasty. I always add vanilla extract, cinnamon, a bit more of sugar and lots of LOVE!
{Ingredients}
¼ cup of vegetable oil
½ cup of skim milk
1 large egg
½ teaspoon of salt
½ teaspoon of vanilla extract
½ teaspoon of cinnamon
2 teaspoon of baking powder
½ cup of white sugar
½ cup of powder sugar
1 ¾ cups of all-purpose flour
1 cup of chopped strawberries and/or blueberries

 {Directions}
1.       Preheat oven to 375 degrees , oil or paper line your muffin tin.
2.       In a bowl, combine oil, milk, vanilla extract and egg {all liquid ingredients}. Beat it lightly.
3.       In a larger bowl, mix flour, salt, cinnamon, baking powder, and sugar {all powder ingredients}. Toss in chopped strawberries or blueberries and stir to coat it with flour. Pour in milk mixture and stir together.
4.       Fill muffins cups and sprinkle the top with sugar. Bake at 375 degrees for 25 minutes, or until the tops bounce back from the touch.
5.       Cool for 10 minutes before serving, dust with powder sugar and ENJOY!!
